  • Author: Mariam
  • Total Time: 10 minutes
  • Yield: About 3/4 cup (serves 6) 1x
  • Diet: Low Salt

Description

This Easy Garlic Dressing is a creamy, tangy, and flavorful sauce made with fresh garlic, mayonnaise, red wine vinegar, lemon juice, Dijon mustard, olive oil, oregano, and Parmesan cheese. Perfect for salads, as a dip, or drizzled over grilled vegetables and meats, this homemade dressing is quick to prepare and elevates any dish with its bright garlic punch and rich texture.

Ingredients

Scale

Garlic Paste

  • 6 fat cloves garlic
  • Coarse salt (for smashing garlic)

Dressing Base

  • 2 tablespoons mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 lemon (juiced)
  • 1 teaspoon Dijon mustard

Additional Ingredients

  • 1/3 cup olive oil
  • 1/2 teaspoon dried oregano
  • 2 tablespoons freshly grated Parmesan cheese
  • Salt and fresh cracked black pepper (to taste)

Instructions

  1. Prepare the Garlic Paste: Mince the garlic finely and sprinkle it with a pinch of coarse salt. Using the back of your knife, smash the garlic by pressing it into the cloves and dragging the knife towards you repeatedly until the garlic forms a soft, smooth paste.
  2. Combine the Base Ingredients: Transfer the garlic paste to a small mixing bowl. Add the mayonnaise, red wine vinegar, freshly squeezed lemon juice, and Dijon mustard. Whisk these ingredients together until they are well blended and smooth.
  3. Add Olive Oil and Seasonings: Slowly whisk in the olive oil along with the dried oregano and freshly grated Parmesan cheese. Continue whisking until the dressing is creamy and homogeneous.
  4. Adjust Seasoning and Consistency: Taste the dressing and season with salt and freshly cracked black pepper as desired. If the dressing is too tangy, add a little more olive oil to mellow it out. To increase acidity, add more lemon juice or red wine vinegar. Whisk well to incorporate any additions.

Notes

  • For a smoother dressing, blend the mixture in a food processor or blender.

  • This dressing can be stored in the refrigerator for up to 5 days.
  • Adjust the amount of Parmesan and oregano based on taste preferences.
  • Serve over fresh salads, as a dip for raw vegetables, or drizzled on grilled chicken or fish.
