Instructions
- Prepare the Garlic Paste: Mince the garlic finely and sprinkle it with a pinch of coarse salt. Using the back of your knife, smash the garlic by pressing it into the cloves and dragging the knife towards you repeatedly until the garlic forms a soft, smooth paste.
- Combine the Base Ingredients: Transfer the garlic paste to a small mixing bowl. Add the mayonnaise, red wine vinegar, freshly squeezed lemon juice, and Dijon mustard. Whisk these ingredients together until they are well blended and smooth.
- Add Olive Oil and Seasonings: Slowly whisk in the olive oil along with the dried oregano and freshly grated Parmesan cheese. Continue whisking until the dressing is creamy and homogeneous.
