For the Pizza Assembly:

  • 16 Small Fajita size flour tortillas
  • 1 can refried beans
  • Taco Sauce
  • 2 cups shredded Colby Jack cheese
  • Diced tomatoes
  • Chopped green onions
  • Vegetable oil

Instructions

  1. Brown the Ground Beef: In a large skillet over medium-high heat, brown the ground beef with chopped onion until fully cooked. Drain excess grease.
  2. Season the Beef: Add salt, pepper, chili powder, cumin, dried cilantro, cayenne, and minced garlic. Stir well.
  3. Fry the Tortillas: Lightly fry flour tortillas in another skillet with vegetable oil until golden brown on both sides. Drain on paper towels.
  4. Assemble the Pizzas: Spread refried beans on tortillas, add beef, cheese, and another tortilla. Top with taco sauce and more cheese.
  5. Bake: Bake at 400°F for about 10 minutes. Top with tomatoes and green onions before serving.
