For the Ground Beef:
- 1 lb ground beef
- 1 chopped onion
- 1/2 tsp salt and pepper
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp dried cilantro
- 1/4 tsp cayenne
- 1 TBSP minced garlic
For the Pizza Assembly:
- 16 Small Fajita size flour tortillas
- 1 can refried beans
- Taco Sauce
- 2 cups shredded Colby Jack cheese
- Diced tomatoes
- Chopped green onions
- Vegetable oil
Instructions
- Brown the Ground Beef: In a large skillet over medium-high heat, brown the ground beef with chopped onion until fully cooked. Drain excess grease.
- Season the Beef: Add salt, pepper, chili powder, cumin, dried cilantro, cayenne, and minced garlic. Stir well.
- Fry the Tortillas: Lightly fry flour tortillas in another skillet with vegetable oil until golden brown on both sides. Drain on paper towels.
- Assemble the Pizzas: Spread refried beans on tortillas, add beef, cheese, and another tortilla. Top with taco sauce and more cheese.
- Bake: Bake at 400°F for about 10 minutes. Top with tomatoes and green onions before serving.
