  • 1 lb Ground pork (or ground beef)
  • 1 tsp Sea salt
  • 1/4 tsp Black pepper (or more if you want it spicy)
  • 6 cups Shredded coleslaw mix (or cabbage and carrots chopped with a knife)
  • 1/4 cup Coconut aminos (or 12 tablespoons more if you like; you can also use low-sodium soy sauce)
  • 2 tsp Toasted sesame oil
  • 1/4 cup Green onions (chopped)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Heat the oil and aromatics: Heat avocado oil in a large cast iron skillet over medium-high heat. Add the minced garlic and fresh ginger. Sauté for about a minute until fragrant, releasing their flavors into the oil.
  2. Cook the ground meat: Add the ground pork (or ground beef) to the skillet. Season with sea salt and black pepper. Use a spatula to break up the meat into small pieces. Increase heat to medium-high and cook until browned and cooked through, about 7 to 10 minutes. Excess oil will render out but can be drained if desired.
  3. Add the vegetables and sauce: Reduce the heat to medium. Add the shredded coleslaw mix and pour in the coconut aminos. Stir well to coat all the ingredients. Cook for about 5 minutes, stirring occasionally until the cabbage is tender but still slightly crisp.
  4. Finish and serve: Remove the skillet from heat. Stir in toasted sesame oil and chopped green onions for added flavor. Optionally, sprinkle with sesame seeds for garnish. Serve immediately while warm.
