Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the stuffed croissants.
- Prepare Cheese Filling: In a food processor, combine the brie (with rind removed) and cream cheese, whipping until smooth and creamy for easy stuffing.
- Make Fig Chipotle Glaze: In a bowl, mix fig jam, honey, chipotle powder, chipotle adobo sauce, and a pinch of salt until well combined to create a sweet and smoky glaze.
- Hollow Croissants: Using a piping tip or a similar tool, carefully hollow out the bottoms of each mini croissant, creating space for the filling without breaking the pastry.
- Fill Croissants: Transfer the whipped brie filling into a piping bag. Pipe the cheese into the hollowed croissants, then create a small well in the center of the cheese filling to spoon in some of the fig chipotle glaze, reserving 1-2 tablespoons of glaze.
- Coat and Top: Brush the remaining fig glaze over the tops of the stuffed croissants. Sprinkle crushed almonds over the glaze to add crunch and help the glaze adhere.
