Instructions
- Prepare the Fire Noodles: Cook the instant noodles according to package instructions, but reduce the cooking time by one minute to keep the noodles slightly firm. Drain well and set aside.
- Soften the Rice Paper Sheets: Fill a shallow dish or plate with warm water. Dip one rice paper sheet completely into the water for a few seconds until it becomes soft and pliable. Lay it flat on a clean surface.
- Assemble the Dumplings: Place a small portion of the cooked noodles on the lower third of the softened rice paper. Sprinkle shredded mozzarella cheese on top. Roll the bottom edge over the filling snugly, then fold in the sides and continue rolling tightly to seal the dumpling. Repeat with remaining sheets.
- Pan-Fry the Dumplings: Heat a small amount of neutral cooking oil in a non-stick skillet over medium-high heat. Place the dumplings seam side down in the skillet and cook for 2-3 minutes on each side or until golden brown and crispy. Remove and drain on paper towels to remove excess oil.
