  • 2 lbs. ground beef
  • 1 small yellow onion, diced
  • 2 oz. chili seasoning packets (two 1-oz. packets)
  • 15 oz. diced tomatoes
  • 10 oz. Rotel tomatoes
  • 15 oz. canned black beans, drained and rinsed
  • 15 oz. canned pinto beans, drained and rinsed
  • 2 cups water

To Serve

  • Small bags of Fritos or 2 large bags
  • Shredded cheddar cheese
  • Diced onions
  • Sour cream

Instructions

  1. Brown the beef: In a skillet over medium-high heat on the stovetop, cook the ground beef until browned and crumbled. Drain off the fat to reduce grease.
  2. Combine ingredients in slow cooker: Add the browned ground beef, diced onion, chili seasoning packets, diced tomatoes, Rotel tomatoes, black beans, pinto beans, and water into the slow cooker. Stir well to combine all ingredients evenly.
  3. Cook in slow cooker: Place the lid on the slow cooker and cook on low heat for 6 hours, allowing the chili flavors to meld and the mixture to thicken slightly.
  4. Serve over Fritos: Before serving, stir the chili well. Spoon the hot chili over Fritos corn chips – either by cutting open individual Fritos bags and pouring the chili directly into the bags or by placing Fritos in serving bowls. Top with shredded cheddar cheese, diced onions, and sour cream as desired for extra flavor and creaminess.
