Instructions

  2. Whip Cream: In a large mixing bowl, pour the heavy whipping cream, add vanilla extract, and whip with a hand held beater until soft peaks form.
  3. Mix Cream Cheese Base: In a separate bowl, blend the softened cream cheese together with lemon juice until smooth and creamy. Then fold the whipped cream gently into this mixture until fully combined.
  4. Fold in Strawberry Mixture: Carefully fold the strawberry and jam mixture into the cheesecake base, leaving visible ripples without fully incorporating, for a marbled effect.
  5. Prepare Muffin Tin: Line a mini muffin tin with mini cupcake liners if desired for easier removal, though it’s optional.
  6. Scoop Cheesecake: Using a 2-tablespoon cookie scoop, fill each muffin cavity with the cheesecake mixture and smooth the tops evenly.
  7. Add Oreo Toppings: Top each cheesecake portion with an Oreo cookie half (or whole if preferred), then cover the pan with foil or parchment paper. Freeze for several hours until completely hardened.
