Ingredients
Scale
Base
- 1/4 cup peanut butter (or almond butter)
- 1 Tablespoon honey (or agave syrup)
- 3/4 cup granola
Filling and Toppings
- 1 cup whole milk Greek yogurt
- 1/2 cup sliced berries (or fruit of choice)
- 1 Tablespoon chopped walnuts
- Honey drizzle (optional)
Instructions
- Line Muffin Tin: Line a muffin tin with 6 paper or silicone liners to prepare the base for your granola cups.
- Mix Peanut Butter, Honey, and Granola: In a small bowl, thoroughly combine peanut butter, honey, and granola until the mixture is evenly coated and sticky enough to hold shape.
- Distribute Into Cupcake Liners: Evenly divide the granola mixture among the cupcake liners in the muffin tin.
- Press Into Cups: Press the granola mixture firmly into the bottom and slightly up the sides of each liner using a spoon or the bottom of a measuring cup to form a sturdy cup base.
- Fill With Yogurt: Spoon the Greek yogurt into each granola cup, filling to the top of the liner, approximately 2 to 3 tablespoons per cup.
- Add Toppings: Place sliced berries or your fruit of choice on top of the yogurt, sprinkle with chopped walnuts, and drizzle honey over each cup if desired for extra sweetness.
- Freeze: Place the muffin tin in the freezer for about 30 minutes to 1 hour, allowing the yogurt and granola cups to set firmly.
- Thaw and Remove: Remove the muffin tin from the freezer and let the cups thaw for 2 to 3 minutes at room temperature, then carefully take each cup out of its liner.
- Enjoy or Store: Enjoy immediately as a refreshing snack or store the granola cups in an airtight container in the freezer for later consumption.
