Description

Garbage Bread is a savory, hearty roll-up featuring a flavorful mixture of ground beef, onions, bacon, pickles, and American cheese wrapped in soft French bread dough. Baked until golden and topped with sesame seeds, it’s served best with a tangy Thousand Island dressing for dipping. This indulgent comfort food makes for a perfect game day snack or casual dinner.

Ingredients

Scale

Meat Mixture

  • 1 pound ground beef
  • ½ cup diced onion
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 6 slices cooked and crumbled bacon (or 1 package of store-bought bacon pieces)
  • 2 dill pickle spears, chopped

Dough and Toppings

  • 11 ounce tube Pillsbury refrigerated French bread dough
  • 1 large egg, beaten
  • 1 Tablespoon sesame seeds

Sauces and Cheese

  • 1/3 cup ketchup
  • 3 Tablespoons mustard
  • 8 slices American cheese (Kraft deli deluxe suggested)
  • Thousand Island dressing for serving

Instructions

  1. Preheat oven and prepare baking sheet: Preheat your oven to 350°F. Line a baking sheet with parchment paper or lightly spray with non-stick cooking spray to prevent sticking.
  2. Cook the beef and onions: In a large skillet, combine the ground beef and diced onions. Cook over medium heat, breaking the beef apart, until fully browned and onions are tender. Season with salt and pepper. Drain any excess grease.
  3. Roll out the dough: On a floured surface, unroll or roll out the Pillsbury French bread dough into a large rectangle shape, approximately 12 by 9 inches.
  4. Spread sauces on dough: Evenly spread the ketchup and mustard over the dough, leaving about a ½-inch border around the edges to make sealing easier.
  5. Layer the fillings: Spread the cooked beef mixture evenly over the sauced dough. Sprinkle the crumbled bacon and chopped dill pickles evenly over the top.
  6. Add cheese: Place the slices of American cheese in a single, even layer over the beef and toppings.
  7. Roll up the dough: Starting from one long edge, carefully roll the dough into a tight log, making sure to seal the edges by pinching the dough together well.
  8. Prepare for baking: Place the rolled dough seam-side down on the prepared baking sheet.
  9. Brush and garnish: Brush the top of the dough with the beaten egg to give it a golden, glossy finish. Sprinkle sesame seeds evenly over the top.
  10. Bake: Bake in the preheated oven for 20-25 minutes or until the crust is golden brown and cooked through.
  11. Cool and slice: Remove from the oven and allow the bread to cool for at least 5 minutes to firm up, making it easier to slice.
  12. Serve: Slice the bread and serve with Thousand Island dressing on the side for dipping. Enjoy warm.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • Use any variety of sandwich cheese if American is unavailable.
  • Feel free to add finely chopped jalapeños for a spicy kick.
  • Make sure to seal the dough edges well to prevent filling from leaking during baking.
  • Refrigerate leftovers and reheat slices in the oven or microwave before serving.
