- 1/2 cup whole milk, lightly warmed
- 2 tablespoons granulated sugar
- 1 envelope (2 1/4 teaspoons) active dry yeast or instant yeast
- 4 tablespoons unsalted butter, melted and lightly cooled
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 2 cups all purpose flour
- 1 teaspoon kosher salt
Roasted Garlic Filling
- 4 heads of garlic, tops cut off to expose the individual cloves
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter, softened to room temperature
- 1/4 cup chopped parsley
- 1/2 teaspoon kosher salt and freshly ground black pepper
- 2 cups shredded mozzarella cheese, preferably thick-cut
Topping
- 2 tablespoons butter, melted
- 1 tablespoon chopped parsley
- 1 tablespoon freshly grated parmesan cheese, plus more for garnish
- 1–2 teaspoons minced garlic
Instructions
- Activate the Yeast: Warm the milk to around 110°F and place in a stand mixer bowl. Add sugar and sprinkle yeast on top. Let it sit undisturbed for 7-10 minutes until bubbly and fragrant if using active dry yeast. Skip this step if using instant yeast.
- Prepare the Dough: Add melted butter, egg, egg yolk, flour, and salt to the yeast mixture. Attach the dough hook to the mixer and knead on medium speed for 6-8 minutes until the dough is smooth and pulls from the sides. Add more flour if sticky. Alternatively, knead by hand for 10 minutes on a floured surface.
- First Rise: Shape the dough into a ball and place into a greased large bowl. Cover tightly with plastic wrap and a towel. Let it rise in a warm place for 1-2 hours until doubled in size.
- Roast the Garlic: Preheat oven to 400°F. Remove papery outer layers of garlic heads, place them cut-side up in a foil-lined baking vessel. Drizzle olive oil over garlic and cover loosely with foil. Roast for 30-40 minutes until cloves are golden and tender. Allow to cool, then extract cloves from skins.
- Prepare the Dough Surface: After the dough has risen, punch it down and turn it onto a floured surface. Roll it into a 13×8 inch rectangle.
- Make the Filling: Pulse roasted garlic cloves in a food processor or blender until a paste forms. Spread softened butter over the dough leaving a small border. Then spread garlic paste, sprinkle chopped parsley, salt, and pepper. Evenly sprinkle shredded mozzarella and gently press into the dough.
- Roll the Dough: Roll the dough tightly into a log starting from the long side with the seam down. Stretch slightly if needed and pinch the edges to seal. Optionally trim the ends for uniformity.
- Cut into Rolls: Using a sharp knife or unscented floss, slice the log crosswise into 9 even pieces.
- Second Rise: Line a 9×9 inch baking dish with parchment paper. Place rolls cut side up, cover tightly with plastic wrap and a kitchen towel. Let rise in a warm spot for 1-2 hours until puffy.
- Bake Rolls: Preheat oven to 350°F. Remove coverings and bake rolls for 30-35 minutes until golden brown.
- Prepare the Topping: In a small bowl, whisk melted butter, chopped parsley, parmesan cheese, and minced garlic together. Set aside.
- Finish and Serve: When rolls are out of the oven, immediately brush them with the garlic parmesan butter. Sprinkle extra parmesan cheese on top if desired. Serve warm and enjoy.
