Ingredients
Scale
Steak and Potatoes
- 1 ½ pounds steak (sirloin preferred)
- 1 pound baby potatoes, cut into ½ inch pieces
- 1 onion, peeled, halved, and thinly sliced
Seasonings and Others
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh parsley
- 1 tablespoon minced garlic (or more to taste)
- 1 tablespoon Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons butter, cubed
Instructions
- Par-boil the potatoes: Place the sliced baby potatoes into a pot of boiling salted water and cook for 5 minutes. Drain them immediately and transfer to a large bowl. Let cool for about 10 minutes until safe to handle.
- Prep the steak: Cut the steak into desired piece sizes based on preferred doneness—2.5 to 3 inches for well done, 3 to 4 inches for medium, and about 5 inches for rare. Optionally, marinate the steak as preferred.
- Combine ingredients: In a large bowl, toss the cut steak, par-boiled potatoes, sliced onion, olive oil, fresh parsley, minced garlic, Italian seasoning, salt, and pepper together thoroughly.
- Assemble foil packets: Lay out four sheets of aluminum foil, each at least 12×12 inches. Evenly distribute the steak and potato mixture among the foil centers. Top each packet with cubed butter, then fold and tightly seal the foil around the contents.
- Cook the foil packets on the grill or fire: Place the foil packets on a hot grill and cook for 8-10 minutes per side or until the potatoes are tender. Adjust cooking times if using different foil or steak sizes, and consider using an oven thermometer to check doneness. If cooking over a fire without a grilling rack, place packets on a 2-inch bed of hot coals.
- Cook the foil packets in the oven: Preheat the oven to 425°F (220°C). Bake the foil packets for approximately 20 minutes, checking doneness from 15 minutes onward. For a charred finish, carefully open the packets and broil for 1-2 minutes before serving.
- Serving caution: When opening foil packets, be careful of escaping hot steam and juices to avoid burns.
Notes
- Par-boiling the potatoes ensures they cook thoroughly and evenly inside the foil packets.
- Adjust steak piece sizes depending on your preferred level of doneness.
- Using fresh herbs like parsley enhances the freshness and flavor balance.
- Grilling over hot coals adds a smoky flavor but carefully monitor cooking times to avoid overcooking.
- For an extra charred crust, open foil packets near the end of baking and broil briefly.
- Always handle foil packets with caution once cooked due to hot steam inside.
