Instructions

  1. Prepare the oven and season salmon: Preheat the oven to Broil on High. Pat the salmon steaks dry with paper towels to remove excess moisture. Season both sides generously with sea salt, black pepper, and garlic powder to enhance flavor.
  2. Make the herb butter: In a small bowl, mash together the softened butter, chopped fresh parsley, and fresh thyme using a fork until well combined. Set aside near the stove for easy access during cooking.
  3. Sear the salmon: Heat the olive oil in a very large cast iron skillet over medium-high heat, swirling it to evenly coat the pan. Place the salmon steaks in a single layer and sear for about 3 minutes until a golden crust forms on the bottom side.
  4. Flip and sear the other side: Carefully flip the salmon steaks using a fish spatula and sear for an additional 2 minutes on the other side to develop a nicely seared surface.
  5. Add herb butter and parmesan: Quickly add dollops of the herb butter over the salmon steaks while still in the skillet. As the butter starts to melt, spread it gently to evenly coat the top. Sprinkle the grated parmesan cheese over the buttered salmon.
  6. Broil to finish: Immediately transfer the skillet to the oven, placing it about 6 inches from the broiler. Broil for 1 to 3 minutes until the salmon reaches an internal temperature of 135-140°F (57-60°C), achieving a tender, slightly pink center. Serve immediately, optionally with lemon wedges for a fresh citrus touch.
