Instructions
- Make the Dough: In a large bowl, combine the all purpose flour, water, olive oil, and salt. Stir the mixture using a wooden spoon or your hands until a dough begins to form, then knead it thoroughly until you achieve a soft but pliable ball of dough.
- Rest the Dough: Cover the dough ball with clingfilm or plastic wrap to prevent drying and set it aside while you prepare the filling.
- Prepare the Filling: Heat a frying pan over medium heat and add 1 tablespoon of olive oil. Add the finely sliced red onions and cook them over low to medium heat for about 10 minutes until softened. Then stir in the balsamic vinegar followed by the sugar. Continue frying for another 3 to 5 minutes until the onions are caramelized and flavorful. Turn off the heat and let the mixture cool.
- Divide the Dough: Knead the rested dough briefly for about 30 seconds, then divide it into 6 equal pieces. Keep 5 pieces covered with a damp tea towel or plastic wrap to prevent drying out while you work on one at a time.
- Roll out the Dough: Lightly flour a clean surface and roll one piece of dough into a thin circular wrapper approximately 20 cm in diameter.
- Fill and Seal: Spread about 1/6 of the cooled onion mixture onto one half of the rolled dough. Sprinkle crumbled goats cheese evenly over the onions. Fold the other half of the dough over the filling and pinch the edges firmly to seal the flatbread into a parcel. Repeat this process with the remaining dough pieces and filling.
- Cook the Flatbreads: Heat a non-stick frying pan over medium heat. Place two stuffed gozleme flatbreads in the pan and cook each side for 3 to 5 minutes until the surfaces are patchy golden brown and cooked through.
- Finish and Serve: Remove the gozleme from the pan and brush both sides with olive oil for extra flavor and shine. Repeat cooking with the remaining flatbreads. Serve warm and enjoy this delicious Turkish treat!
