Scale
Dip Base
- 8 ounces hummus (store bought or homemade)
- 1 cup 0% fat Greek yogurt
- 1 clove garlic (finely minced)
- 1 tsp chopped fresh dill
- Juice of 1/2 small lemon
- Pinch kosher salt
- Freshly ground black pepper, to taste
Layers
- 2 tbsp red onion (minced)
- 1 cup English cucumber (about ½ large, ½-inch dice)
- 1 cup Roma tomato (seeded, ½-inch dice)
- 1/4 cup crumbled feta cheese
- 1/4 cup Kalamata olives (sliced)
To Serve
- Whole grain pita chips or baked corn chips
Instructions
- Prepare the Yogurt Mixture: In a small bowl, combine the Greek yogurt, finely minced garlic, chopped fresh dill, lemon juice, kosher salt, and freshly ground black pepper. Stir well until all ingredients are evenly incorporated. Set this mixture aside to allow the flavors to meld.
- Layer the Dip: Using an 8”x8” or 7”x11” glass dish, start by spreading the hummus evenly as the bottom layer. Next, spoon and spread the yogurt mixture over the hummus layer. Sprinkle the minced red onion evenly on top, followed by the diced English cucumber. Add the seeded and diced Roma tomatoes evenly over the cucumber. Sprinkle the crumbled feta cheese across the surface, then finish with the sliced Kalamata olives for a salty, briny flavor.
- Serve: Serve the layered dip chilled or at room temperature. Accompany it with whole grain pita chips or baked corn chips for dipping. Enjoy this vibrant and healthy Mediterranean appetizer immediately or cover and refrigerate it for up to 24 hours for deeper flavors.
Notes
- To add extra flavor, drizzle a little olive oil over the top just before serving.
- This dip can be made a few hours ahead and refrigerated, but avoid layering too early to prevent the vegetables from becoming soggy.
- Use fresh dill for the best herbal taste; dried dill can be substituted at 1/3 the quantity.
- For a spicier kick, add a sprinkle of red pepper flakes into the yogurt mixture.
- Pair with gluten-free chips or vegetables for a gluten-free version.
