  • Author: Mariam
  • Total Time: 3 hours 25 minutes (including marinating)
  • Yield: 4-6 servings 1x
  • Diet: Low Fat

Description

Delicious and tender chicken wings marinated in a flavorful Greek yogurt blend with fresh herbs and spices, then grilled to crispy perfection. This recipe brings together creamy, zesty, and herbaceous notes, ideal for a tasty and healthy appetizer or main dish.

Ingredients

Scale

Marinade

  • 1 cup whole milk plain Greek yogurt
  • 1 tbsp lemon juice
  • 3 medium cloves garlic, crushed
  • 1/4 cup chopped fresh parsley
  • 2 tbsp chopped fresh oregano
  • 1 tbsp chopped fresh dill
  • 1 tsp kosher salt
  • 1/2 tsp cumin

Chicken

  • 3 lb chicken wings

Instructions

  1. Prepare the marinade: In a large resealable bag or a baking dish big enough to hold the wings, combine the Greek yogurt, lemon juice, crushed garlic, chopped parsley, oregano, dill, kosher salt, and cumin. Mix well to blend all the flavors together.
  2. Marinate the chicken: Add the chicken wings to the marinade and toss to coat each piece thoroughly. Seal the bag or cover the dish, and refrigerate for at least 3 hours or up to 24 hours to allow the flavors to penetrate the meat.
  3. Preheat the grill: Heat your grill to high until hot, then reduce the heat to medium for even cooking. This temperature balance will help the wings cook through without burning.
  4. Grill the wings – first side: Remove the wings from the marinade and wipe off excess coating to avoid flare-ups on the grill. Place the wings flat side down on the grill and cook covered for 7 to 8 minutes until they are browned and have nice grill marks.
  5. Grill the wings – second side: Turn the wings over carefully and continue cooking for another 7 to 8 minutes, ensuring they become crisp and fully cooked internally. The wings should be golden brown and the meat tender.
  6. Serve: Remove wings from the grill and serve hot, accompanied by roasted pepper and feta sauce or traditional tzatziki sauce for dipping.

Notes

  • Marinating time is critical; longer marination results in juicier and more flavorful wings.
  • Wiping off excess marinade before grilling helps prevent flare-ups and promotes even crisping.
  • Ensure the internal temperature of the wings reaches 165°F (74°C) for safe consumption.
  • Herb substitutes like thyme or mint can be used if fresh parsley, oregano, or dill are unavailable.
  • Serve with fresh lemon wedges for an extra citrusy kick.
