Instructions

  1. Grill the Pineapple: Heat an outdoor grill or grill pan to medium-high heat. Remove from heat and allow to cool for a few minutes so it’s easier to handle.
  2. Prepare the Salsa Base: Once the pineapple has cooled, dice it into small pieces. In a medium bowl, combine the diced grilled pineapple with the diced red onion, finely chopped jalapeño, chopped cilantro, lime juice, and 1/4 teaspoon salt. Mix well to blend all the flavors.
  3. Add Avocado and Adjust Seasoning: Gently fold the diced avocado into the salsa mixture. Stir carefully to avoid mashing the avocado. Taste the salsa and add additional salt if needed to enhance the flavors.
  4. Serve: Serve the salsa immediately with your favorite chips or use it as a fresh topping for grilled dishes or tacos for a burst of flavor and heat.

  • To reduce the heat level, remove all seeds and ribs from the jalapeño as instructed.
