Instructions
- Grill the Pineapple: Heat an outdoor grill or grill pan to medium-high heat. Place the pineapple slices on the grill and cook for about 2 minutes per side, or until grill marks appear and the pineapple is slightly caramelized. Remove from heat and allow to cool for a few minutes so it’s easier to handle.
- Prepare the Salsa Base: Once the pineapple has cooled, dice it into small pieces. In a medium bowl, combine the diced grilled pineapple with the diced red onion, finely chopped jalapeño, chopped cilantro, lime juice, and 1/4 teaspoon salt. Mix well to blend all the flavors.
- Add Avocado and Adjust Seasoning: Gently fold the diced avocado into the salsa mixture. Stir carefully to avoid mashing the avocado. Taste the salsa and add additional salt if needed to enhance the flavors.
- Serve: Serve the salsa immediately with your favorite chips or use it as a fresh topping for grilled dishes or tacos for a burst of flavor and heat.
Notes
- To reduce the heat level, remove all seeds and ribs from the jalapeño as instructed.
- Use ripe but firm avocado to prevent the salsa from becoming mushy.
