Description

This Ground Chicken and Broccoli Stir Fry is a quick and flavorful dish that is perfect for a busy weeknight dinner. The combination of tender ground chicken, crisp broccoli, and a spicy-sweet sauce will have your taste buds dancing!

For the Sauce:

  • ½ cup chicken broth (low sodium)
  • 1 tablespoon cornstarch
  • ¼ cup soy sauce (low sodium)
  • 1 tablespoon mirin
  • 3 tablespoons honey (or more)
  • 3 tablespoons sriracha (or more)
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the Stir Fry:

  • 2 tablespoons oil (divided)
  • 4 cups broccoli florets
  • 1 pound ground chicken
  • 3 green onions (sliced, both white and green parts)
  • 1 cup frozen peas (or more)

Instructions

  1. Mix the Sauce: In a small mixing bowl, combine chicken broth and cornstarch. Add soy sauce, mirin, honey, sriracha, sesame oil, garlic powder, and onion powder. Mix well and set aside.
  2. Saute Broccoli: Heat 1 tablespoon of oil in a large skillet over medium heat. Saute broccoli for 3 to 4 minutes until almost cooked. Set aside.
  3. Cook Ground Chicken: Heat another tablespoon of oil in the skillet. Add ground chicken and cook for 2 to 3 minutes until partially cooked.
  4. Add Green Onions and Sauce: Saute green onions for 1 minute, then add the prepared sauce to the skillet.
  5. Simmer: Let the sauce simmer for 1 to 2 minutes, breaking up any large pieces of chicken.
  6. Finish the Stir Fry: Add peas and broccoli to the skillet. Cook for 2 to 3 minutes until coated with sauce and thickened.
  7. Serve: Serve the stir fry with your choice of side dish. Garnish with green onions and sesame seeds if desired.

Notes

  • You can adjust the spice level by adding more or less sriracha.
  • Feel free to add other vegetables like bell peppers or snap peas.
  • Serve over rice or noodles for a complete meal.
