Ingredients
Scale
Ground Turkey Mixture
- 1 lb ground turkey
- 1 Tbsp sesame oil (or favorite cooking oil)
- 2–3 garlic cloves, minced
- 2 tsp grated ginger
- ½ tsp smoked paprika
- ½ tsp onion powder
- 3 Tbsp low sodium soy sauce
- 1–2 Tbsp sriracha
- 2–3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt (adjust to taste)
- 2 tsp corn starch
Bang Bang Sauce
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½–1 Tbsp sriracha (adjust for spice)
- 1 tsp rice vinegar
- 2 tsp honey
To Assemble
- Cooked rice
- Shredded carrots
- Sliced cucumbers
- Shelled edamame
- Pickled onions
- Avocado slices
- Shredded cabbage
- Sliced green onion
- Sesame seeds
Instructions
- Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Adjust the spice level by adding more sriracha or balance sweetness with extra honey or sweet chili sauce. Chill the sauce until ready to serve.
- Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Add the ground turkey, breaking it into smaller pieces as it cooks. Brown the turkey fully, ensuring it reaches an internal temperature of 165°F.
- Add Seasonings: Reduce heat to medium-low. Stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Simmer the mixture for 2-3 minutes, stirring occasionally to let flavors meld.
- Thicken the Mixture: Sprinkle corn starch over the turkey mixture and stir well to combine and thicken the sauce slightly. Optionally, stir in about 2 tablespoons of the prepared Bang Bang Sauce into the turkey mixture for extra flavor just before serving.
- Assemble the Bowls: In serving bowls, layer cooked rice and your choice of veggies such as shredded carrots, cucumbers, edamame, pickled onions, avocado, and shredded cabbage. Spoon the warm ground turkey mixture over the top, drizzle with additional Bang Bang Sauce, and garnish with sliced green onions and sesame seeds. Serve immediately.
Notes
- You can adjust the spice level of both the turkey mixture and Bang Bang Sauce by varying the amount of sriracha used.
- Feel free to swap ground turkey with ground chicken or lean ground pork if preferred.
- Use low sodium soy sauce to control saltiness and keep sodium levels moderate.
- The sauce can be prepared in advance and stored in the refrigerator for up to 3 days.
- For a gluten-free option, ensure the soy sauce is gluten-free and confirm the chicken broth is gluten-free as well.
