Eggs and Filling
- 6 hard boiled eggs, peeled and cut lengthwise
- 1 avocado, pitted and peeled
- 1 tbsp lime juice
- 1/4 tsp salt
- 1/4 tsp onion powder
- 1 tsp garlic, minced (or 1 tsp garlic powder)
- 2 tsp cilantro, finely chopped
- Smoked paprika, for garnish
Instructions
- Prepare the egg yolk mixture: Carefully remove the yolks from the halved hard boiled eggs and place them into a small mixing bowl. Add the ripe avocado, lime juice, salt, onion powder, minced garlic, and chopped cilantro to the bowl.
- Mash the filling: Using a fork, mash the egg yolks and avocado mixture together until smooth and creamy, ensuring all ingredients are well incorporated.
- Fill the egg whites: Spoon the guacamole mixture back into the egg white halves. Alternatively, use a piping bag or a small plastic bag with a corner snipped off to pipe the filling for a neater presentation.
- Garnish and serve: Sprinkle a dash of smoked paprika over each filled egg for a pop of flavor and color. Arrange on a serving plate.
- Store properly: Keep the deviled eggs stored in an airtight container in the refrigerator for up to 2 days for optimal freshness and taste.
Notes
- Use ripe avocados for the creamiest texture and best flavor.
- If desired, add a pinch of cayenne pepper for a subtle heat.
- For easier peeling of eggs, boil eggs and immediately transfer to ice water after cooking.
- Use fresh lime juice rather than bottled for a brighter flavor.
- This recipe makes a great appetizer for parties or snacks.
