Wet Ingredients:

  • ⅓ cup honey
  • ⅓ cup coconut sugar or light brown sugar
  • 2 large eggs (room temperature)
  • 1 cup mashed very ripe banana
  • ½ cup full-fat Greek yogurt (room temperature)
  • ¼ cup milk (cow’s milk or any nut milk works fine)
  • ½ cup oil (melted coconut oil or mild olive oil recommended)
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners. Set aside.
  2. In a medium bowl, sift together the all-purpose flour, whole wheat flour, baking powder, salt, and cinnamon. Set aside.
  3. In a separate large bowl, whisk together the honey, coconut sugar (or brown sugar), eggs, Greek yogurt, milk, and mashed bananas until fully combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently with a rubber spatula until just combined. Be careful not to overmix; a few dry spots should remain.
  5. Fold in the melted oil and stir until just combined.
  6. Add the chocolate chips and fold gently until evenly distributed.
  7. Spoon the batter evenly into the muffin tins, filling each cup to the top.
  8. Bake for 18–20 minutes, or until the tops are puffed and golden, and a toothpick inserted into the center comes out clean with just a few moist crumbs.
  9. Let the muffins cool in the tin for at least 5 minutes before transferring to a cooling rack.
  10. Enjoy these warm muffins right away, or store them in an airtight container for up to two days.
