- ⅓ cup coconut sugar or light brown sugar
- 2 large eggs (room temperature)
- 1 cup mashed very ripe banana
- ½ cup full-fat Greek yogurt (room temperature)
- ¼ cup milk (cow’s milk or any nut milk works fine)
- ½ cup oil (melted coconut oil or mild olive oil recommended)
- 1 cup chocolate chips
Instructions
- Preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners. Set aside.
- In a medium bowl, sift together the all-purpose flour, whole wheat flour, baking powder, salt, and cinnamon. Set aside.
- In a separate large bowl, whisk together the honey, coconut sugar (or brown sugar), eggs, Greek yogurt, milk, and mashed bananas until fully combined.
- Gradually add the dry ingredients to the wet mixture, stirring gently with a rubber spatula until just combined. Be careful not to overmix; a few dry spots should remain.
- Fold in the melted oil and stir until just combined.
- Add the chocolate chips and fold gently until evenly distributed.
- Spoon the batter evenly into the muffin tins, filling each cup to the top.
- Bake for 18–20 minutes, or until the tops are puffed and golden, and a toothpick inserted into the center comes out clean with just a few moist crumbs.
- Let the muffins cool in the tin for at least 5 minutes before transferring to a cooling rack.
- Enjoy these warm muffins right away, or store them in an airtight container for up to two days.
