Description

A delicious and healthy breakfast oatmeal apple cake recipe that is easy to make and perfect for meal prep. This flourless and refined sugar-free cake is a cross between baked oatmeal and a breakfast cake.

Oatmeal Apple Cake:

  • 1 cup oats
  • 1 large apple, peeled and chopped
  • 3 Tbsp honey
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tbsp yogurt
  • 2 eggs
  • 1 Tbsp butter or coconut oil

Instructions

  1. Making the Cake Batter: Add all ingredients into a bowl or blender and process until smooth. Add more oats at the end.
  2. Decorating and Baking: Top the cake with oats or apple slices. Spread the batter in a baking pan and bake at 180C / 350F for 20-30 minutes. Let the cake cool before slicing.
  3. Storage: Store slices in an airtight container in the fridge.
