  • 1 tsp Baking powder
  • 1/4 tsp Sea salt
  • 1/4 cup Unsalted butter (cold)
  • 1 large Egg
  • 2 tbsp Heavy cream
  • 1 tsp Vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit (176 degrees Celsius) to prepare for baking the cobbler.
  2. Cook Peaches: In a large saucepan, combine sliced peaches, Besti Monk Fruit Allulose blends (regular and brown), cinnamon, and sea salt. Cook over medium heat for about 15 minutes, stirring occasionally until peaches soften and release some liquid. Adjust sweetness as needed based on peach sweetness.
  3. Thicken Filling: Slowly sprinkle xanthan gum evenly over the peach mixture and stir until it thickens to a jam-like consistency, ensuring it doesn’t clump.
  4. Arrange Filling: Transfer and spread the peach filling evenly in a single layer at the bottom of a 9×9 inch baking dish.
