Ingredients
Base Ingredients
- 1 1/2 cup gluten free oats (or regular)
- 3/4 cup cashew nuts (raw, unsalted)
- 1/3 cup shredded unsweetened coconut
- 1/4 cup collagen powder (~30 grams; or more-see recipe notes)
- 1/8 teaspoon salt
Filling and Flavor
- 1 3/4 cup freeze dried strawberries (divided)
- 1/2 cup chopped fresh strawberries
- 1/3 cup cream cheese
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup
Instructions
- Process dry ingredients: Add the oats, cashew nuts, shredded coconut, collagen powder, and salt into the bowl of a food processor. Pulse for about 30 seconds or until the mixture reaches a fine powder consistency.
- Add wet ingredients: To the processed dry mixture, add the chopped fresh strawberries, cream cheese, maple syrup, and vanilla extract. Pulse again for another 30 seconds until the mixture resembles a thick, sticky dough.
- Incorporate freeze-dried strawberries: Add 3/4 cup of the freeze-dried strawberries to the mixture and process briefly just until combined. The dough will become sticky at this point.
- Shape the bites: Lay parchment paper on a tray. Moisten your hands with water to prevent sticking, then shape the dough into approximately 14 small energy bites.
- Prepare strawberry powder coating: Spread the remaining 1 cup of freeze-dried strawberries onto a sheet of parchment paper. Cover with another parchment paper sheet and use a rolling pin to crush the strawberries into a fine powder.
- Coat the bites: Roll each energy bite in the strawberry powder until fully coated. Place them back onto parchment paper.
- Freeze to set: Put the coated cheesecake bites in the freezer for at least 30 minutes to harden.
- Storage: Keep the cheesecake bites stored in an airtight container in the freezer for up to one month for best freshness.
Notes
- You can substitute regular oats if gluten-free is not required.
- Collagen powder is optional but adds protein and texture — adjust quantity to your preference.
- Freezing helps the bites harden and maintain their shape, making them easier to handle.
- Use moistened hands when shaping to prevent sticking and to help form neat bites.
- These bites are perfect for a quick energy boost, post-workout snack, or healthy dessert alternative.
- Store in the freezer to preserve freshness and texture.
