Instructions

  1. Process dry ingredients: Add the oats, cashew nuts, shredded coconut, collagen powder, and salt into the bowl of a food processor. Pulse for about 30 seconds or until the mixture reaches a fine powder consistency.
  2. Add wet ingredients: To the processed dry mixture, add the chopped fresh strawberries, cream cheese, maple syrup, and vanilla extract. Pulse again for another 30 seconds until the mixture resembles a thick, sticky dough.
  3. Incorporate freeze-dried strawberries: Add 3/4 cup of the freeze-dried strawberries to the mixture and process briefly just until combined. The dough will become sticky at this point.
  4. Shape the bites: Lay parchment paper on a tray. Moisten your hands with water to prevent sticking, then shape the dough into approximately 14 small energy bites.
  5. Prepare strawberry powder coating: Spread the remaining 1 cup of freeze-dried strawberries onto a sheet of parchment paper. Cover with another parchment paper sheet and use a rolling pin to crush the strawberries into a fine powder.
  6. Coat the bites: Roll each energy bite in the strawberry powder until fully coated. Place them back onto parchment paper.
  7. Freeze to set: Put the coated cheesecake bites in the freezer for at least 30 minutes to harden.
  8. Storage: Keep the cheesecake bites stored in an airtight container in the freezer for up to one month for best freshness.
