Ingredients
Scale
Main Ingredients
- 2 tablespoons olive oil
- 1 cup chopped yellow onion (about 1 small onion)
- Salt and black pepper, to taste
- 1 pint full-fat cottage cheese
- 1/3 cup roughly chopped fresh basil
- 1/3 cup roughly chopped fresh parsley
- 1/4 cup thinly sliced chives or scallions, plus more for garnishing
- 2 tablespoons freshly squeezed lemon juice (from 1 large lemon)
For Serving
- Chips, crackers, bread or crisp veggies
Instructions
- Sauté Onions: Place a medium skillet over medium heat and add the olive oil. Add the chopped yellow onion and sprinkle with salt. Cook, stirring occasionally, until the onions become golden brown, approximately 7 to 10 minutes. Remove from heat and transfer onions to a bowl to cool to room temperature, about 15 minutes.
- Blend Ingredients: Once the onions are cooled, add them to a food processor or blender along with the full-fat cottage cheese, chopped fresh basil, parsley, chives, and freshly squeezed lemon juice. Blend the mixture for about 3 minutes until smooth, stopping to scrape down the sides as needed. Taste the dip and season with additional salt and black pepper to preference.
- Chill and Serve: Cover the blended dip and refrigerate for at least 30 minutes to allow flavors to meld. Before serving, garnish with extra sliced chives and a few cracks of black pepper. Serve chilled alongside chips, crackers, bread, or crisp vegetables for dipping.
Notes
- Using full-fat cottage cheese enhances the creaminess and rich texture of the dip.
- Be patient while sautéing the onions to develop a deep golden color and sweet flavor.
- Fresh herbs such as basil, parsley, and chives contribute to the bright and fresh flavor profile.
- The lemon juice adds brightness and a slight tang balancing the richness of the dip.
- Chilling the dip for at least 30 minutes is essential for flavors to combine fully and for the dip to thicken slightly.
- Serve immediately after chilling with fresh garnishes for best presentation.
- This dip keeps well refrigerated for up to 2 days in an airtight container.
