  • Total Time: 2 hours 35 minutes
  • Yield: 12 servings 1x

Description

This Homemade Jam Donut Focaccia is a delightful fusion of traditional focaccia bread with the sweet, fruity charm of a raspberry jam donut. Soft, fluffy dough is infused with olive oil and topped generously with raspberry preserves before baking to golden perfection. Finished with a sweet confectioners’ sugar glaze, this recipe offers a unique, irresistibly tasty treat perfect for breakfast, dessert, or an indulgent snack.

Ingredients

Scale

Dough

  • 1.75 cups Warm Water (105-115°F)
  • 2 tsp Sugar (optional if using instant yeast)
  • 1 packet Active Dry Yeast
  • 2 cups Bread Flour (can substitute with all-purpose flour)
  • 2 cups All-Purpose Flour
  • 2 tsp Salt
  • 6 tbsp Olive Oil (divided)

Topping and Glaze

  • 1 jar Raspberry Preserves (can swap with other jams)
  • 2 cups Confectioners’ Sugar
  • 24 tbsp Whole Milk (as needed)

Instructions

  1. Activate Yeast: In a small bowl, combine warm water with sugar and sprinkle the active dry yeast over the surface. Let the mixture sit for 5 minutes until it becomes bubbly and frothy, indicating the yeast is activated.
  2. Mix Dough: In a stand mixer bowl, combine the activated yeast mixture with bread flour, all-purpose flour, and salt. Mix on low speed until a sticky dough forms, ensuring all ingredients are well incorporated.
  3. First Rise: Grease a large bowl with some olive oil. Transfer the dough into the bowl, cover with a towel, and let it rise in a warm place for about 1 hour or until it doubles in size.
  4. Prepare Pan and Second Rise: Grease a 9×13-inch baking pan with olive oil. Once the dough has risen, punch it down gently to release air, then transfer it into the greased pan. Fold the dough to coat it evenly with oil. Cover loosely and allow it to rise again for 1 hour until puffed.
  5. Preheat Oven: While the dough is undergoing the second rise, preheat your oven to 425°F (220°C).
  6. Add Jam Topping: After the second rise, poke deep holes all over the dough with your fingers or the back of a spoon. Spread raspberry preserves generously over the dough, allowing some of the jam to fill the holes for a burst of flavor.
  7. Bake Focaccia: Place the baking pan in the preheated oven and bake for 18 to 22 minutes or until the focaccia turns golden brown and cooked through.
  8. Optional Additional Jam: Remove the focaccia from the oven and, if you like, add more raspberry preserves on top for extra sweetness.
  9. Prepare Glaze: In a small bowl, mix the confectioners’ sugar with 2 to 4 tablespoons of whole milk, adjusting to reach a smooth glaze consistency.
  10. Glaze and Serve: Allow the focaccia to cool slightly, then spread the glaze over the top evenly. Cut into squares and serve fresh for the best taste and texture experience.

Notes

  • Ensure your yeast is fresh and bubbly for optimal dough rise.
  • Sugar is optional when using instant yeast, but it helps feed active dry yeast.
  • You can substitute bread flour with all-purpose flour if unavailable.
  • Feel free to swap raspberry preserves with any favorite jam or preserve.
  • For a thinner glaze, add more milk; for thicker, use less.
  • Serve focaccia warm or at room temperature for best flavor.
