For the Cornbread:
- 1/2 cup (1 stick) butter, melted
- 2/3 cup granulated sugar
- 2 Tbsp. honey
- 2 large eggs
- 1–1/4 cups buttermilk, shaken well
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. kosher salt
For the Honey Butter Topping:
- 1/4 cup butter, melted
- 2 Tbsp. honey
Instructions
- Preheat Oven and Prepare Baking Dish: Preheat oven to 350 degrees F. Grease an 8×8-inch square baking dish.
- Mix Wet Ingredients: In a medium bowl, combine melted butter, sugar, and honey. Whisk in eggs one at a time, then stir in buttermilk.
- Add Dry Ingredients: Mix in cornmeal, flour, baking soda, and salt until just combined. Do not over-mix.
- Bake: Pour batter into the prepared dish and bake for 45-50 minutes, until a toothpick inserted in the center comes out clean.
- Prepare Honey Butter: In a small bowl, mix melted butter and honey.
- Finish and Serve: Poke holes in the cornbread and pour the honey butter mixture over the top. Let sit for 5 minutes before slicing and serving warm.
Notes
- You can add a handful of corn kernels for extra texture.
- For a savory twist, sprinkle some shredded cheese on top before baking.
