Milk Tea Pudding
- 1 3/4 cup whole milk
- 2 tbsp white sugar
- 1 tbsp honey
- 3 Lipton black tea bags
- 1 tbsp gelatin (1 package)
Boba (Tapioca Pearls)
- 1/2 cup dried boba/tapioca balls
- 3 cups water
- 1/4 cup brown sugar
Instructions
- Prepare the Boba: In a medium pot, bring 3 cups of water and 1/4 cup brown sugar to a boil. Once boiling, add the dried boba and let it simmer over medium heat for 3 minutes until the boba float to the surface. Turn off the heat and let the boba sit in the hot water for a few more minutes while preparing the pudding.
- Make the Milk Tea Mixture: In a small pot, combine the whole milk, white sugar, honey, and gelatin. Add the 3 black tea bags to the pot and heat gently, stirring, until the mixture starts bubbling at the edges and all the ingredients including the gelatin are fully dissolved. Remove the tea bags by squeezing them gently to extract maximum flavor. Allow the mixture to cool slightly.
- Strain and Pour: Strain the milk tea mixture through a fine mesh sieve to ensure a smooth pudding base. Pour the strained mixture evenly into small pudding cups or molds.
- Add Boba and Chill: Add 1 tablespoon of the prepared boba into each pudding cup. Refrigerate the cups for at least 1 to 2 hours to allow the pudding to set firmly.
- Serve: Once set, serve the pudding chilled with a dollop of honey on top and the remaining boba balls for added chewiness and sweetness as garnish.
