Milk Mixture:
- 1 1/2 cups milk (Dairy or non-dairy milk, look for something rich, rather than thin)
- 1 large egg + 1 yolk
- 3 tbs sugar
- 1/8 tsp pumpkin pie spice
- 1/8 tsp cinnamon
- 1/8 tsp Kosher salt
- 1/4 tsp pure vanilla extract
Additional:
- 1/4 cup pumpkin puree (canned is fine)
- Fresh grated nutmeg
Instructions
- Prepare Milk Mixture: Pour milk into a saucepan. Add egg, yolk, sugar, pumpkin pie spice, cinnamon, salt, and vanilla. Turn the stove to medium-high heat, whisking well.
- Thicken and Add Pumpkin: Whisk regularly until the mixture thickens and froths. Remove from heat before boiling and quickly whisk in pumpkin.
- Serve: Pour the mixture into serving mugs and grate fresh nutmeg over the top.

- You can adjust the sweetness by adding more or less sugar according to your taste.
