Milk Mixture:

  • 1 1/2 cups milk (Dairy or non-dairy milk, look for something rich, rather than thin)
  • 1 large egg + 1 yolk
  • 3 tbs sugar
  • 1/8 tsp pumpkin pie spice
  • 1/8 tsp cinnamon
  • 1/8 tsp Kosher salt
  • 1/4 tsp pure vanilla extract

Additional:

  • 1/4 cup pumpkin puree (canned is fine)
  • Fresh grated nutmeg

Instructions

  1. Prepare Milk Mixture: Pour milk into a saucepan. Add egg, yolk, sugar, pumpkin pie spice, cinnamon, salt, and vanilla. Turn the stove to medium-high heat, whisking well.
  2. Thicken and Add Pumpkin: Whisk regularly until the mixture thickens and froths. Remove from heat before boiling and quickly whisk in pumpkin.
