Cheesecake Filling:
- 8 ounces cream cheese, softened
- 1/4 cup powdered erythritol
- 1 Teaspoon vanilla extract
- 1/4 cup heavy whipping cream
- 1/4 cup peanut butter
Chocolate Coating:
- 3/4 cup Lily’s Sugar-Free chocolate (approximately 1.5 bars)
- 2 Teaspoons coconut oil
Instructions
- Mix cream cheese, erythritol, and heavy whipping cream until smooth. Combine until well incorporated.
- Mix in peanut butter and vanilla extract until fully combined, set aside. Ensure a smooth mixture.
- Melt chocolate and mix with coconut oil. Create a smooth, chocolatey mixture.
- Brush silicone cups with chocolate mixture and place in the freezer for 5 minutes. Set to solidify.
- Repeat the previous step and freeze for 10 minutes. Add another layer of chocolate.
- Place a couple spoonfuls of cheesecake fluff into each cup and freeze for 15 minutes. Allow the cheesecake layer to set.
- Top cups with chocolate to cover the cheesecake fluff. Ensure all sides are covered.
- Freeze for 20 minutes covered or refrigerate for 1 hour. Allow the bites to set before serving.
Notes
- You can customize these bites by adding chopped nuts or a sprinkle of sea salt on top.
