Tuna Filling
- 12 oz can of tuna
- 2 tbsp mayo (or Greek yogurt)
- 3 tbsp Dijon mustard
- 1 tsp garlic salt
- 1 tsp onion powder

- Approximately 3 slices cheddar cheese (or desired amount)
Instructions
- Prepare Tuna Mixture: In a medium bowl, combine the tuna, Greek yogurt or mayo, Dijon mustard, garlic salt, and onion powder. Mix thoroughly to create an evenly flavored filling.
- Prep Peppers: Slice off and discard the stems of the mini bell peppers. Then cut each pepper in half lengthwise and remove any seeds inside to create little pepper boats for stuffing.
- Bake Peppers: Arrange the pepper halves on a baking sheet and bake them at 375°F (190°C) for about 15 minutes, flipping them halfway through to ensure even roasting.
- Stuff and Top: Remove the peppers from the oven and fill each half with the prepared tuna mixture. Place a slice or shredded cheddar cheese on top of the filling.
- Melt Cheese: Return the stuffed peppers to the oven and bake for an additional 5 to 7 minutes, or until the tuna filling is hot and the cheddar cheese has fully melted and become bubbly.

- You can substitute Greek yogurt for mayo to reduce fat and add protein.
- Use any type of shredded cheese if preferred instead of sliced cheddar.
