Tuna Filling

  • 2 tbsp mayo (or Greek yogurt)
  • 3 tbsp Dijon mustard
  • 1 tsp garlic salt
  • 1 tsp onion powder

Topping

  • Approximately 3 slices cheddar cheese (or desired amount)

Instructions

  1. Prepare Tuna Mixture: In a medium bowl, combine the tuna, Greek yogurt or mayo, Dijon mustard, garlic salt, and onion powder. Mix thoroughly to create an evenly flavored filling.
  2. Prep Peppers: Slice off and discard the stems of the mini bell peppers. Then cut each pepper in half lengthwise and remove any seeds inside to create little pepper boats for stuffing.
  3. Bake Peppers: Arrange the pepper halves on a baking sheet and bake them at 375°F (190°C) for about 15 minutes, flipping them halfway through to ensure even roasting.
  4. Stuff and Top: Remove the peppers from the oven and fill each half with the prepared tuna mixture. Place a slice or shredded cheddar cheese on top of the filling.
  5. Melt Cheese: Return the stuffed peppers to the oven and bake for an additional 5 to 7 minutes, or until the tuna filling is hot and the cheddar cheese has fully melted and become bubbly.
