- 1 13.5-oz can Coconut milk (cold; use only the cream and discard the coconut water)
- 1 cup Heavy cream (or more coconut milk/cream for dairy-free/paleo)
- 1/4 cup Besti Powdered Monk Fruit Allulose Blend
- 2 tsp Vanilla extract
Add-ins
- 2 cups Ice cubes
Instructions
- Blend Base Ingredients: In a blender, combine the coconut milk cream, heavy cream, powdered monk fruit allulose blend, and vanilla extract. Blend together for 20 seconds until the mixture is smooth and well combined.
- Add and Pulse Ice Cubes: Add the ice cubes to the blender. Pulse the mixture until the ice is just crushed. Be careful not to blend too long, as it can cause the shake to become watery. Serve immediately.
Notes
- For a dairy-free or paleo version, replace heavy cream with additional coconut milk cream.
- Do not over-blend after adding ice to maintain the creamy texture without watering down the shake.
- Use canned coconut milk chilled overnight to separate the cream easily.
- You can adjust sweetness by adding more or less monk fruit and allulose blend to taste.
