Bread and Spreads
- 12 slices sandwich bread
- 4 tbsp. mayonnaise, divided
- 1 tbsp. prepared basil pesto
- 1 tbsp. prepared sun-dried tomato pesto (or a couple of pureed sun-dried tomatoes)
Meats and Cheese
- 8 slices bacon, cut in half
- 1/2 lb. shaved ham
- 1/2 lb. shaved turkey
- 4 slices cheese (Swiss, mozzarella, or your choice)
Vegetables
- Romaine or green leaf lettuce, as needed
- 4 avocados, peeled and sliced

Instructions
- Toast the Bread: Toast all 12 slices of sandwich bread until they are lightly golden brown. Set them aside to cool slightly.
- Cook the Bacon: Fry the bacon pieces until they are just barely crisp. Avoid overcooking to maintain some chewiness. Drain the bacon on paper towels to remove excess grease and set aside.
- Prepare the Pesto Mayonnaises: In one small bowl, mix 2 tablespoons of mayonnaise with the prepared basil pesto. In a separate small bowl, mix the remaining 2 tablespoons of mayonnaise with the prepared sun-dried tomato pesto or pureed sun-dried tomatoes. These will be your sandwich spreads.
- Assemble First Two Layers: Spread the basil pesto mayonnaise on one side of two bread slices. On the first slice, layer shaved ham and some lettuce over the basil pesto mayo. On the second slice, arrange half of the avocado slices on the pesto mayo, then top with some bacon strips. Place the second slice (avocado and bacon side) ingredient-side down on top of the first slice to form the first double layer.
- Add Third Layer: Spread the sun-dried tomato pesto mayonnaise on the top of the sandwich’s top bread slice. Add shaved turkey slices and lettuce over this spread.
- Build Final Layer: Take a third slice of bread and spread sun-dried tomato pesto mayonnaise on one side. Top this with the other half of the avocado slices, a few bacon strips, and a slice of your chosen cheese. Place this slice ingredient-side down on top of the turkey layer, completing the triple-decker sandwich. Repeat the process for remaining ingredients to create more sandwiches.
- Slice and Serve: Use a sharp knife to cut each sandwich in half diagonally, then cut those halves again into fourths. This creates manageable sandwich quarters perfect for serving, ideally with potato chips on the side.
