Ingredients

Milk Mixture:
- 2 cups or 470 ml milk
- 1 cup or 110 g Flaked coconut
- 4 eggs
- 1 tsp vanilla
- 1/2 cup or 60 g flour
Other Ingredients:
- 8 Tablespoons butter, melted
- 3/4 cup or 150 g sugar
- Juice and zest of 1/2 lemon
Instructions
- Mix all ingredients: In a bowl, combine the milk, coconut, eggs, vanilla, flour, melted butter, sugar, and lemon juice/zest using a spoon or hand whisk.
- Pour into pie plate: Grease and flour a pie plate (8-9 inches), then pour the mixture into it.
- Bake: Preheat the oven to 350°F (180°C). Bake the pie for about 45 minutes or until slightly wobbly in the center.
- Cool and refrigerate: Allow the pie to cool, then refrigerate overnight for best results.
- Serve: Enjoy a slice of Lemon Impossible Pie on its own or with a scoop of vanilla ice cream!
