Ingredients
Scale
Chicken
- 4 chicken breasts, boneless and skinless
Breading Station
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 1 cup bread crumbs
- 1 cup grated Parmesan cheese (divided)
Seasonings
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
For Cooking & Topping
- 2 tablespoons olive oil
- 1 cup shredded mozzarella cheese
Instructions
- Preheat Oven & Prepare Ingredients: Preheat your oven to 375°F (190°C). Gather all your ingredients and set up three shallow dishes for breading.
- Mix Breading Components: In the first dish, combine bread crumbs, half (1/2 cup) of the Parmesan cheese, Italian seasoning, salt, and pepper. In the second dish, beat eggs with milk. Place flour in the third dish.
- Bread the Chicken: Dredge each chicken breast first in the flour, shaking off excess, then dip in the egg mixture, and finally coat thoroughly in the breadcrumb-Parmesan mixture. Place the breaded chicken on a plate.
- Pan Fry for a Golden Crust: Heat olive oil in a large skillet over medium heat. Add chicken breasts and cook for 3-4 minutes per side, or until golden brown. Transfer chicken to a baking dish.
- Prepare Cheese Topping: In a small bowl, combine the remaining 1/2 cup Parmesan cheese with the shredded mozzarella and minced garlic. Mix well.
- Bake to Finish: Top each chicken breast generously with the cheese mixture. Bake uncovered for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the cheese is melted and bubbly.
- Serve: Remove from oven and let rest for a few minutes before serving. Enjoy hot, garnished with fresh parsley if desired.
Notes
- For extra crispiness, use panko crumbs instead of regular bread crumbs.
- You can prep the chicken ahead—bread and refrigerate up to 1 day before frying and baking.
- Leftovers make a great sandwich or salad topping.
- Check doneness with a meat thermometer—165°F (74°C) ensures juicy, safe chicken.
