  • 6 tbsp (84g) unsalted butter, room temperature
  • 3/4 cups (155g) sugar
  • 1 1/2 tbsp vegetable oil
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 cup + 2 tbsp (150ml) cereal milk (from above)

Filling

  • 6 tbsp (84g) unsalted butter, room temperature
  • 3/4 cup (86g) powdered sugar
  • 7 oz marshmallow creme
  • 1 cup (35g) Lucky Charms Cereal marshmallows

Frosting

  • 3/4 cup (168g) unsalted butter, room temperature
  • 1/4 cup (48g) shortening
  • 3 cups (345g) powdered sugar
  • 3/4 tsp vanilla extract
  • Pinch of salt
  • Leftover cereal milk as needed

Decoration

  • 2 cups Lucky Charms Cereal, chopped
  • Lucky Charms cereal marshmallows for topping

Instructions

  1. Make the Cereal Milk: Add the milk and Lucky Charms cereal to a bowl and let it sit for 20 minutes to infuse the milk with the cereal flavor. Strain the milk through a fine sieve and discard the cereal pieces. Reserve slightly more than 1/2 cup for the cupcake batter and set aside the remainder for the frosting.
  2. Prepare for Baking: Line a cupcake pan with cupcake liners and preheat the oven to 350°F (176°C).
  3. Mix Dry Ingredients: In a medium bowl, combine the all-purpose flour, baking powder, and salt; set aside.
  4. Cream Butter, Sugar, and Oil: In a large mixing bowl, beat together the butter, sugar, and vegetable oil until the mixture turns light in color and fluffy, approximately 3 minutes. This step is important for a light cupcake texture.
  5. Add Eggs and Vanilla: Incorporate the eggs one at a time, mixing until mostly combined after each addition. Add the vanilla extract with the second egg. Scrape down the bowl sides to ensure even mixing.
  6. Add Dry Ingredients Partially: Add half of the dry flour mixture to the wet batter and mix until mostly combined.
  7. Add Cereal Milk: Slowly pour in the cereal milk and mix thoroughly. The batter may appear a bit curdled, which is normal.
  8. Add Remaining Dry Ingredients: Add the rest of the flour mixture and mix until the batter is smooth and well combined. Avoid over mixing to keep cupcakes tender.
  9. Bake the Cupcakes: Fill each cupcake liner about 3/4 full with batter. Bake for 14-16 minutes or until a toothpick inserted into the center comes out clean.
  10. Cool the Cupcakes: Remove the cupcakes from the oven and transfer them to a cooling rack to cool completely.
  11. Make the Filling: Beat the butter in a mixing bowl until smooth. Gradually add half of the powdered sugar and beat until combined and smooth. Add the remaining powdered sugar and beat again until fully incorporated. Stir in the marshmallow creme until smooth. Gently fold in the Lucky Charms marshmallows.
  12. Core and Fill Cupcakes: Using a cupcake corer or a knife, carefully remove the center of each cooled cupcake. Fill the hollowed centers with the marshmallow filling. Spread a thin layer of filling over the top of each cupcake.
  13. Decorate with Cereal: Turn the cupcakes upside down and press the exposed filling into the chopped Lucky Charms cereal to coat the sides. Set aside.
