Malva Pudding Recipe

  • Author: Mariam
  • Total Time: 55 minutes
  • Yield: 6 servings 1x

Description

Malva Pudding is a classic South African dessert, known for its spongy, moist texture and sweet apricot flavor. This warmly spiced, caramelized pudding is baked to golden perfection and drenched in a rich cream sauce, making it an irresistible treat best enjoyed fresh and warm.

Ingredients

Scale

Pudding

  • ¾ cup sugar
  • 2 large eggs
  • ¼ cup apricot jam
  • 1 teaspoon white vinegar
  • 2 tablespoons unsalted butter, melted
  • ½ cup milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Cream Sauce

  • ½ cup heavy cream
  • ½ cup evaporated milk
  • ½ cup powdered sugar
  • ½ cup butter
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Spray an 8×8-inch cake pan with baking spray and set aside to prepare for baking.
  2. Mix Wet Ingredients: In a medium bowl, use a hand mixer to beat together sugar and eggs until the mixture is light and lemon-colored. Add apricot jam and mix well. Then add melted butter, white vinegar, and milk, mixing for an additional 1-2 minutes to combine thoroughly.
  3. Combine Dry Ingredients: In a separate bowl, sift together all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients and mix for 2-3 minutes until fully combined and smooth.
  4. Bake the Pudding: Pour the batter into the prepared baking dish. Bake for 30-45 minutes. After the first 15 minutes, cover the pudding loosely with foil to prevent it from getting too dark. The pudding should rise and develop a golden-brown color.
  5. Prepare Cream Sauce: While the pudding is baking, combine heavy cream, evaporated milk, powdered sugar, butter, and vanilla extract in a medium pot. Warm on medium heat, stirring continuously until all ingredients are smoothly melted and combined into a sauce.
  6. Soak Pudding: When the pudding is freshly out of the oven and still hot, pour the prepared cream sauce evenly over the top. Let the pudding stand for at least 10 minutes so it can absorb the sauce fully.
  7. Serve: Serve the Malva Pudding warm for the best taste and texture. Enjoy this traditional, comforting dessert fresh and moist.

Notes

  • Covering the pudding after 15 minutes of baking prevents the top from burning while allowing the middle to cook through.
  • Use unsalted butter to control the saltiness of the dessert.
  • Letting the pudding soak in the cream sauce is key to achieving its signature moist texture.
  • For a dairy-free version, substitute butter with a dairy-free alternative and use coconut cream instead of heavy cream.
  • Serve with vanilla ice cream or custard for an extra indulgent experience.
