Instructions
- Prepare the Chia Pudding: In a measuring jug, combine 350 ml of milk, 1 ½ tablespoons of maple syrup, and ½ teaspoon of vanilla extract. Stir well to mix thoroughly. Add 65g of chia seeds and stir again using a fork to ensure the chia seeds are evenly distributed. Leave the mixture to set for at least 4 hours or preferably overnight, stirring every couple of hours to prevent clumping.
- Blend the Dragon Fruit: Peel and roughly chop half of the pink dragon fruit. Blend it until completely smooth, creating a vibrant pink puree.
- Combine Dragon Fruit with Chia Pudding: Stir the pureed dragon fruit into the prepared chia pudding base. Mix well to evenly incorporate the flavors and color.
- Blend the Mango: Peel and roughly dice the Alphonso mango. Blend it until smooth and creamy, ready for layering.
- Assemble the Parfait: In serving cups or jars, layer the dragon fruit chia pudding, mango puree, and vanilla coconut yogurt if using. Repeat layers as desired. Top the parfait with freshly chopped mango pieces for added texture and flavor.
