  • 34 salmon fillets, skin removed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 of seasoning mix (see below)

Seasoning Mix

  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Sauce

  • 1 cup unsalted chicken stock
  • 1/2 cup heavy cream
  • 1/3 cup chopped sundried tomatoes
  • 5 garlic cloves, minced
  • 1/2 cup freshly shredded parmesan cheese
  • Remaining half of seasoning mix
  • Fresh basil, for garnish

Instructions

  1. Prepare seasoning mix: Combine dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper thoroughly in a small bowl to create the seasoning mix.
  2. Season salmon: Rub half of the seasoning mix evenly onto both sides of the salmon fillets to ensure even flavor distribution.
  3. Sear salmon: Heat olive oil in a large skillet over medium-high heat. Once hot, place salmon fillets flesh-side down and sear for about 5 minutes per side until golden and cooked to your liking. Remove salmon from skillet and set aside.
  4. Sauté garlic and sundried tomatoes: Reduce heat to low. Add minced garlic and chopped sundried tomatoes to the same skillet. Optionally add a splash of sundried tomato oil for extra flavor. Sauté gently for 1-2 minutes until fragrant.
  5. Deglaze skillet: Pour in the chicken stock and scrape the bottom of the pan to loosen any browned bits, incorporating their flavor into the liquid.
  6. Add cream and cheese: Stir in heavy cream, freshly shredded parmesan cheese, and the remaining seasoning mix. Mix thoroughly to combine all ingredients evenly.
  7. Simmer sauce: Increase heat to medium-low and simmer the sauce for 10-15 minutes until it has thickened to a creamy consistency. Taste and adjust salt and pepper if needed.
  8. Finish cooking salmon in sauce: Return the seared salmon fillets to the skillet, spooning sauce over them. Cook for an additional 3-5 minutes depending on desired doneness—3 minutes for medium and 5 minutes for well done.
  9. Serve: Plate the salmon and spoon generous amounts of the creamy sundried tomato sauce over top. Garnish with fresh basil leaves and serve immediately.
