Instructions

  1. Soft boil the eggs: In a medium saucepan, bring water to a boil with salt and white vinegar. Using a slotted spoon or spider strainer, carefully lower room-temperature eggs into the boiling water. Ensure eggs are fully submerged. Simmer gently for 6 minutes over medium heat (or 7 minutes if using cold eggs from the refrigerator).
  2. Chill and peel the eggs: Remove eggs from boiling water and immediately place them into a cold water bath for 10 minutes or until fully cooled. Gently peel the shells off the eggs, being careful to keep the soft whites intact.
  3. Prepare the marinade: In a mixing bowl, combine soy sauce, water, honey, diced yellow onion, minced garlic, minced scallions, sliced Korean red pepper, sliced serrano pepper, and toasted sesame seeds. Mix thoroughly to incorporate all ingredients.
  4. Marinate the eggs: Place peeled eggs in an airtight container and pour the marinade over them until fully submerged. Refrigerate and marinate for at least 6 hours, preferably overnight, to allow the flavors to penetrate. The eggs can be stored in the marinade for up to one week.
