- 5 large Tomatoes (chopped & pureed)
- 2 tbsp Garlic (peeled, finely chopped)
- 1 medium Onion (peeled, finely chopped)
- 1 Green Chilli (finely chopped)
- ½ tsp Dried Oregano (finely chopped)
- ½ tsp Dried Basil
- 3 tbsp Tomato Ketchup
- 1 tsp Red Chilli Powder
- ½ tsp Black Pepper Powder
- Water as needed
- Salt to taste
- 1 tsp Sugar
- 2 tbsp Coriander Leaves (finely chopped)
- 10 slices White Bread
- 5 large Eggs
- 1¼ cup Mozzarella Cheese
- 5 tbsp Coriander Leaves (finely chopped)
- 5 tbsp Butter
- 5 tsp Oil (to fry eggs)
Instructions
- Step 1: In a bowl, mix the minced chicken, red chilli powder, black pepper powder, coriander leaves, green chilli, Parmesan cheese, bread crumbs, salt, and Italian seasoning until combined. Shape the mixture into meatballs.
- Step 2: Heat 2 tablespoons of oil in a pan over medium heat. Fry the meatballs until they develop a nice golden color on all sides. Remove and drain on paper towels; set aside.
- Step 3: In the same pan with the remaining oil, sauté garlic, onion, and green chilli for about a minute until fragrant. Add salt and sugar, and cook until the onions turn golden.
- Step 4: Stir in the tomato puree, tomato ketchup, red chilli powder, and black pepper powder. Cook the sauce until it reduces slightly, then add water as needed, oregano, and dried basil. Mix well.
- Step 5: Return the meatballs to the pan with the sauce. Simmer on low heat for 15 minutes. Stir in chopped coriander leaves and adjust seasoning if necessary.
- Step 6: Heat oil in another pan and fry the eggs sunny side up or to your preference.
