Description

These Mediterranean Quesadillas are a delicious fusion of fresh spinach, creamy feta, melted mozzarella, and bright red onion, wrapped in warm flour tortillas and cooked to golden perfection. Perfect as a quick lunch or a satisfying snack, they bring together classic Mediterranean flavors in a crispy, cheesy delight.

Ingredients

Scale

Main Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper, to taste

Instructions

  1. Prepare the filling: In a mixing bowl, combine the shredded mozzarella cheese, crumbled feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper to taste. Mix all ingredients well to make a cohesive filling.
  2. Assemble the quesadillas: Lay one flour tortilla flat on a clean surface. Spread one-fourth of the filling mixture evenly over half of the tortilla, then fold the other half over the filling, creating a half-moon shape.
  3. Preheat the skillet: Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil, allowing it to warm but not smoke.
  4. Cook the first side: Place the folded tortilla in the skillet. Cook for 3 to 4 minutes until the underside is golden brown and crispy.
  5. Flip and cook the other side: Carefully flip the quesadilla using a spatula and cook for another 3 to 4 minutes until the second side is also golden brown and the cheese inside has melted.
  6. Serve: Remove the quesadilla from the skillet, let it cool slightly, then slice into wedges. Serve warm for the best taste and texture.

Notes

  • Use low to medium heat to ensure the quesadillas cook evenly without burning.
  • For added flavor, consider adding a sprinkle of dried oregano or a squeeze of lemon juice to the filling.
  • To make it vegetarian but not vegan, ensure cheeses used are free from animal rennet.
  • Serve with a side of Greek yogurt or tzatziki for an authentic Mediterranean touch.
  • If you prefer a crispier quesadilla, press down gently with a spatula while cooking.
