- 1/2 ripe, fresh avocado, pitted, peeled and sliced

- 6 Tbsp. shredded cheddar-jack cheese
- Spray oil, for coating pan
Instructions
- Prepare the Tortillas: Cut a single line from the center to the edge of each tortilla.
- Layer the Ingredients: Divide the black beans, avocado slices, spinach, and cheese onto each tortilla.
- Fold the Quesadillas: Fold the tortillas into compact triangles.
- Cook the Quesadillas: Toast the folded quesadillas in a pan until cheese is melted and tortillas are browned.
