Description
This Mini Strawberry French Toast recipe offers a delightful twist on classic French toast by incorporating macerated strawberries for a naturally sweet and fresh topping. Perfectly crispy on the outside and tender inside, each bite is enhanced with maple syrup and a dusting of confectioners sugar, making it an ideal breakfast or brunch treat.
Ingredients
Scale
Strawberry Mixture
- 1 cup sliced strawberries
- 2 tsp white sugar
French Toast
- 2 eggs
- 2 tbsp full or low-fat milk
- Pinch of salt
- 1 – 2 tbsp unsalted butter
- 10 slices baguette (french stick), about 2 1/5″ / 3cm thick
Toppings
- Maple syrup (not optional!)
- Confectioners sugar (icing sugar), for dusting (optional)
- Extra strawberries (optional)
Instructions
- Macerate Strawberries: Combine the sliced strawberries with white sugar in a bowl and let them sit for several minutes to macerate. This process softens the strawberries and creates a sweet syrup to enhance flavor.
- Prepare Egg Mixture: In a shallow bowl, lightly whisk together the eggs, milk, and a pinch of salt until well combined to create the batter for dipping the bread.
- Heat Butter: Melt the unsalted butter in a large frying pan over medium-high heat until it is hot and foamy, ready for frying the bread slices.
- Dip and Fry Bread: Dip each slice of baguette into the egg mixture, coating each side for about 3 seconds. Place the coated slices in the hot pan and fry each side for approximately 2 1/2 minutes, or until golden brown and crispy.
- Serve: Remove the French toast from the pan and plate. Top generously with the macerated strawberries and their syrup. Drizzle with maple syrup and optionally dust with confectioners sugar. Add extra fresh strawberries if desired. Serve immediately for best taste.
Notes
- Using day-old or slightly stale baguette slices helps absorb the egg mixture better without becoming soggy.
- Adjust the amount of sugar in the strawberries according to your sweetness preference.
- For a richer flavor, use full-fat milk and unsalted butter or even add a splash of vanilla to the egg mixture.
- Keep the cooked French toast warm on a low oven heat if making larger batches.
- Optional toppings like whipped cream or nuts can add extra texture and flavor.
- This recipe works well with other berries or fruits as a variation.
