Description

Mississippi Mud Potatoes is a comforting and hearty casserole featuring tender Yukon Gold potatoes baked with crispy bacon, sharp cheddar cheese, and a creamy mayonnaise base, seasoned with garlic and onion powders, and topped with fresh green onions for a flavorful finish.

Ingredients

Scale

Potatoes and Vegetables

  • 3 pounds yellow potatoes (like Yukon Gold), peeled and diced
  • 1 small yellow onion, diced
  • 2 teaspoons minced garlic
  • 2 green onions, sliced

Meat

  • 1 pound bacon, cooked and crumbled

Dairy and Condiments

  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese

Seasonings

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste (about 1/2 teaspoon each)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Combine Ingredients: In the prepared baking dish, add peeled and diced yellow potatoes, diced yellow onion, minced garlic, cooked and crumbled bacon, mayonnaise, shredded cheddar cheese, onion powder, garlic powder, and salt and pepper to taste.
  3. Mix Thoroughly: Stir all the ingredients well to ensure even distribution. For ease, you can mix everything in a large bowl first, then transfer the mixture to the baking dish.
  4. Bake the Casserole: Cover the baking dish with aluminum foil and bake in the preheated oven for about 1 hour, or until the potatoes are tender when pierced with a fork.
  5. Finish and Serve: Remove from the oven, sprinkle sliced green onions on top, and serve. Stir gently before serving for an even mix of flavors.

Notes

  • Use Yukon Gold potatoes for a creamy texture.
  • Ensure bacon is cooked crisp for best texture and flavor.
  • You may prepare the dish a day ahead and bake just before serving.
  • Mayonnaise adds creaminess and moisture, do not substitute with low-fat versions for the same result.
  • Leftovers keep well and can be reheated in the oven or microwave.
