Ingredients
Scale
Crust
- 1 1/2 cups raw cashews
- 1/4 teaspoon cinnamon
- Pinch of sea salt
- 1 teaspoon vanilla extract
- 1 1/2 cups (10 ounces) packed Medjool dates, pitted
- 2 tablespoons natural almond butter or any “drippy” nut butter
Filling
- 1 1/2 cups Nancy’s Organic Vanilla Whole Milk Yogurt
Topping
- Fresh fruit for topping (strawberries, raspberries, blueberries, peaches, kiwi, mango)
- 2–3 tablespoons sliced almonds, toasted, for garnish
Instructions
- Prepare the crust: Place raw cashews, cinnamon, and a pinch of sea salt in a food processor. Pulse until the mixture achieves a very fine, crumb-like consistency. Add vanilla extract, pitted dates, and almond butter, then blend until the mixture binds together into a crumbly dough that sticks when squeezed.
- Form the crust: Lightly spray a 9-inch tart or pie pan with nonstick spray. Press the crust mixture firmly into the pan, making sure to push it up the sides evenly to create the tart shell.
- Add the filling: Spoon the vanilla whole milk yogurt into the crust shell and smooth it out evenly with a rubber spatula, creating a creamy layer.
- Decorate with fruit: Arrange your choice of fresh fruit—such as sliced strawberries, blueberries, raspberries, peaches, kiwi, and mango—on top of the yogurt layer for a colorful presentation.
- Finish with garnish: Sprinkle toasted sliced almonds over the fruit for added texture and flavor. Serve immediately or chill briefly before serving. Enjoy!
Notes
- You can substitute almond butter with any other runny nut butter like cashew or peanut butter.
- Ensure the dates are soft and fresh for better binding of the crust.
- Use whole milk yogurt for creamier texture; Greek yogurt may also be used but will yield a thicker filling.
- This tart is best served fresh but can be refrigerated for up to 24 hours.
- Toast the sliced almonds lightly over medium heat on a skillet or in the oven for extra crunch.
