Description

This No-Bake Vanilla Yogurt Fruit Tart with Cashew Date Crust is a wholesome and refreshing dessert that combines a naturally sweet and nutty crust with creamy vanilla yogurt and a vibrant assortment of fresh fruits. Perfect for a healthy treat or special occasion, this tart requires no baking and is easy to prepare with simple, natural ingredients.

Ingredients

Scale

Crust

  • 1 1/2 cups raw cashews
  • 1/4 teaspoon cinnamon
  • Pinch of sea salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (10 ounces) packed Medjool dates, pitted
  • 2 tablespoons natural almond butter or any “drippy” nut butter

Filling

  • 1 1/2 cups Nancy’s Organic Vanilla Whole Milk Yogurt

Topping

  • Fresh fruit for topping (strawberries, raspberries, blueberries, peaches, kiwi, mango)
  • 23 tablespoons sliced almonds, toasted, for garnish

Instructions

  1. Prepare the crust: Place raw cashews, cinnamon, and a pinch of sea salt in a food processor. Pulse until the mixture achieves a very fine, crumb-like consistency. Add vanilla extract, pitted dates, and almond butter, then blend until the mixture binds together into a crumbly dough that sticks when squeezed.
  2. Form the crust: Lightly spray a 9-inch tart or pie pan with nonstick spray. Press the crust mixture firmly into the pan, making sure to push it up the sides evenly to create the tart shell.
  3. Add the filling: Spoon the vanilla whole milk yogurt into the crust shell and smooth it out evenly with a rubber spatula, creating a creamy layer.
  4. Decorate with fruit: Arrange your choice of fresh fruit—such as sliced strawberries, blueberries, raspberries, peaches, kiwi, and mango—on top of the yogurt layer for a colorful presentation.
  5. Finish with garnish: Sprinkle toasted sliced almonds over the fruit for added texture and flavor. Serve immediately or chill briefly before serving. Enjoy!

Notes

  • You can substitute almond butter with any other runny nut butter like cashew or peanut butter.
  • Ensure the dates are soft and fresh for better binding of the crust.
  • Use whole milk yogurt for creamier texture; Greek yogurt may also be used but will yield a thicker filling.
  • This tart is best served fresh but can be refrigerated for up to 24 hours.
  • Toast the sliced almonds lightly over medium heat on a skillet or in the oven for extra crunch.
