Meringue

  • 2 large egg whites
  • 1/2 cup granulated sugar
  • 1/8 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

Pop Tarts

  • 2 sheets puff pastry, thawed
  • 1/3 cup Nutella
  • 1/3 cup marshmallow frosting
  • 9 squares milk or dark chocolate, your preference
  • 1 egg + 1 teaspoon water, lightly beaten (for egg wash)

Nutella Glaze

  • 1/2 cup Nutella
  • 3 tablespoons heavy cream
  • Drop of vanilla extract
  • Graham cracker crumbs, for garnish

Instructions

  1. Prepare the Meringue: Combine the egg whites, granulated sugar, and cream of tartar in a heat-proof bowl, ideally the bowl of an electric stand mixer. Place the bowl over a double boiler with simmering water, whisking constantly for 3-4 minutes until the sugar dissolves and the egg whites feel slightly warm to the touch. Remove from heat immediately and transfer the bowl to the mixer. Using the whisk attachment, beat on low speed, gradually increasing to high, for 6-7 minutes until the mixture is glossy and thick. Beat in vanilla extract for another minute to combine.
  2. Preheat the Oven: Set your oven to 425°F (220°C) to get ready for baking the pop tarts.
  3. Assemble the Pop Tarts: Lay a sheet of parchment paper on your workspace and place one puff pastry sheet on top. Spoon 1 to 2 teaspoons of marshmallow frosting in a tic-tac-toe pattern with 9 spots across the pastry. Add 1 to 2 teaspoons of Nutella on each dollop of marshmallow frosting, then top each spot with one square of chocolate. Cover evenly with the second puff pastry sheet. Using a sharp knife or pizza cutter, carefully cut around each filling cluster to form 9 squares. Press edges together gently but firmly with a fork to seal the tarts.
  4. Apply Egg Wash and Bake: Brush the tops of the tarts with the lightly beaten egg and water mixture to achieve a beautiful, golden finish. Bake on a parchment-lined baking sheet for 20 to 25 minutes until the puff pastry is puffed and golden brown. Remove from the oven and allow to cool briefly.
  5. Prepare Nutella Glaze: While the pop tarts bake, whisk together Nutella, heavy cream, and a drop of vanilla extract until smooth and pourable. Adjust thickness by adding more cream a teaspoon at a time if needed.
  6. Glaze and Garnish: Drizzle the Nutella glaze generously over the slightly cooled pop tarts. Sprinkle with graham cracker crumbs for added texture and that classic s’mores flavor. Serve shortly after glazing for the best experience.
