Description

Wet Ingredients:

  • 1 egg
  • 2 1/2 Tbsp yogurt
  • 1 tsp vanilla
  • 1 Tbsp honey

Additional Ingredients:

  • pinch of baking soda
  • 1 tsp coconut oil or butter

Instructions

  1. Grind the oats: Using a nut grinder or food processor, grind the oats.
  2. Mix wet ingredients: In a small bowl, combine the egg, yogurt, vanilla, and honey.
  3. Add dry ingredients: Mix in the ground oats and baking soda.
  4. Preheat pan: Preheat a non-stick pan over low to medium heat and coat with coconut oil or butter.
  5. Cook pancakes: Spoon the batter onto the pan to make small pancakes. Cook until edges are set and bubbles form, then flip and cook the other side.
