Wet Ingredients:

- 2 1/2 Tbsp yogurt
- 1 tsp vanilla
- 1 Tbsp honey
Additional Ingredients:
- pinch of baking soda
- 1 tsp coconut oil or butter
Instructions
- Grind the oats: Using a nut grinder or food processor, grind the oats.
- Mix wet ingredients: In a small bowl, combine the egg, yogurt, vanilla, and honey.
- Add dry ingredients: Mix in the ground oats and baking soda.
- Preheat pan: Preheat a non-stick pan over low to medium heat and coat with coconut oil or butter.
- Cook pancakes: Spoon the batter onto the pan to make small pancakes. Cook until edges are set and bubbles form, then flip and cook the other side.
- Serve: Serve hot with your favorite toppings.
