Instructions
- Preheat and prepare baking sheet: Preheat your oven to 400 degrees Fahrenheit. Melt the butter and pour it evenly onto a large rimmed baking sheet or sheet pan, coating the bottom for flavor and crispiness.
- Slice chicken: If you are using chicken breasts, slice them into strips about 1 inch wide to ensure even cooking and easy coating.
- Prepare coating stations: In one shallow dish, combine the flour, smoked paprika, garlic powder, onion powder, and half of the salt and pepper. In a second shallow dish, beat the eggs well. In a third shallow dish, mix the panko breadcrumbs with the remaining salt and pepper.
- Coat the chicken: Dip each chicken strip first into the flour mixture, then into the beaten eggs, and finally press into the panko breadcrumbs to completely coat the strips evenly on all sides.
- Arrange on baking sheet: Place the coated chicken strips atop the melted butter on the prepared baking sheet, spacing them so they are not touching to allow crisping.
- Bake and flip: Bake the chicken strips for 10 minutes at 400°F. Then carefully flip each strip over to ensure even browning and bake for an additional 10-15 minutes or until the internal temperature reaches 165°F and the chicken is cooked through with a crispy coating.
