Description

This creamy Parmesan-Mustard Sauce combines the rich flavors of Parmesan cheese with the tangy kick of Dijon and coarse grain mustards, enhanced by a subtle crunch from toasted sesame seeds. Perfect as a flavorful topping for grilled vegetables, roasted meats, or as a dipping sauce, this recipe is quick and easy to prepare on the stovetop.

Ingredients

Scale

Sauce Ingredients

  • 1 tablespoon butter
  • 2 tablespoons all-purpose flour
  • 1 cup vegetable broth
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon coarse grain mustard
  • 2 tablespoons sesame seeds (toasted or not)
  • Fresh ground pepper, to taste

Instructions

  1. Melt Butter and Cook Flour: Melt the butter in a medium saucepan over medium-low heat. Whisk in the all-purpose flour and cook, whisking continuously, for about 3 minutes to create a roux and cook off the raw flour taste.
  2. Add Broth and Thicken Sauce: Gradually whisk in the vegetable broth, increasing the heat to medium, and bring the mixture to a gentle boil. Continue to cook while stirring or whisking until the sauce has thickened to a smooth consistency.
  3. Incorporate Parmesan Cheese: Whisk in the grated Parmesan cheese and keep cooking the sauce just until the cheese melts and is fully incorporated, ensuring a creamy texture.
  4. Add Mustards and Sesame Seeds: Remove the saucepan from heat and immediately whisk in both the Dijon mustard and coarse grain mustard, followed by the sesame seeds. The sauce should be well combined and flavorful.
  5. Season and Serve: Season the sauce with fresh ground pepper to taste. Serve the sauce immediately while warm, perfect for drizzling over your favorite dishes.

Notes

  • For extra flavor, toast the sesame seeds lightly before adding.
  • If the sauce becomes too thick, thin with a little extra vegetable broth or water.
  • This sauce pairs wonderfully with grilled chicken, steamed vegetables, or as a dip for breadsticks.
  • Use fresh Parmesan cheese for the best flavor and texture.
  • Adjust mustard quantities to suit your taste preferences for more or less tanginess.
