- Melt Butter and Marshmallows: In a large pot over medium heat, melt the 6 tablespoons of salted butter. Add 15 ounces of mini marshmallows (all but 1 cup) to the pot and stir continuously until completely smooth and melted. Remove from heat to prevent burning.
- Add Flavorings: Stir in the 3.5 ounce box of instant pistachio pudding mix and 1 teaspoon of pure vanilla extract into the melted marshmallow mixture. Use a spatula to fold them in evenly, ensuring the flavor is well distributed.
- Mix in Cereal and Remaining Marshmallows: Add 6 cups of rice krispies cereal and the remaining 1 cup of mini marshmallows to the pot. Mix thoroughly until all cereal and marshmallows are coated evenly with the pistachio-flavored marshmallow mixture.
- Press into Pan: Line a 9-inch square baking dish with parchment paper. Pour the mixture into the dish, pressing it down evenly to create a compact layer. Allow the treats to cool and set for at least one hour at room temperature.
- Cut and Decorate: Once set, remove the treats from the dish by lifting the parchment paper. Cut the treats into 16 even squares.
- Drizzle with Chocolate: Drizzle the ½ cup of melted dark chocolate over the top of the cut treats. Allow the chocolate to set for about 15 minutes before serving. These treats are especially delicious chilled in the fridge.
